Apple Carrot Kohlrabi Salad

Ingredients

  • 1 bunch carrots (about 7 medium carrots)
  • 1 kohlrabi
  • 2 apples

mayo

  • 1 egg
  • 1/2 c Harvest Garlic Olive Oil
  • 1/2 c Harvest Lemon Olive Oil
  • 1 tsp sea salt
  • 1 tsp lemon juice
  • 3 T Harvest Vinegar (Gravestein apple, serrano honey or honey ginger)

Instructions

  1. Grate in a food processor or by hand the first three ingredients and place in a bowl. Place mayo ingredients, except vinegar, in a tall jar or immersion blender container and using an immersion blender, blend all ingredients until they form a thick mayonnaise. Add in vinegar.  Mix mayonnaise in with the grated vegetable and apples and adjust salt to taste.  Serve cold.
