Berry Banana Breakfast Muffin (grain, egg, dairy free, no sugar added)

Ingredients

  • 3/4 cup almond flour
  • 2 cups buckwheat flour
  • 1/3 cup coconut flour
  • 1 tsp unrefined sea salt
  • 3 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cups chopped nuts optional
  • 1 T chia seeds
  • 1 1/2 cup apple sauce
  • 2 bananas mashed
  • 1 cup berries frozen or fresh
  • 1 T vanilla
  • 1 tsp almond extract
  • 8 T melted grass fed butter or coconut oil
  • For moister muffins add 1/3 cup coconut cream whole milk, almond milk...

Instructions

  • Preheat oven to 375, line a muffin tin with liners
  • Combine dry ingredients in a large bowl. In a medium bowl combine all wet ingredients and then mix together. Combine well. Add to muffin tin and bake for 25-30 minutes. Serve with grass fed butter or coconut oil! These muffins are stick to your gut muffins and perfect for a winter morning!
