Breakfast Muffins

Ingredients

  • 2 russet potatoes, washed and grated
  • 6 eggs beaten
  • salt and pepper
  • Olive oil
  • cheese for topping
  • optional: cooked sausage, ham or bacon

Instructions

  1. preheat oven to 425

  2. Place grated potato in a bowl and mix with one tablespoon of olive oil and salt and pepper.  Place mixture in the bottom of muffin tins and bake until golden brown.  Meanwhile mix together eggs and optional: chop up peppers and veggies and cook meat.  Once potatoes are cooked, remove from oven and in each tin add eggs and optional veggies and meat.  Top with cheese and bake for another 5-10 minutes until eggs are firm and cheese is melted.  Serve warm and freeze for quick breakfasts to go!
