- 1 egg (preferably from pastured organic chickens)
- 1/2 cup chipotle olive oil, or extra virgin olive oil and add 2 tsp more chipotle seasoning
- 1 tsp unrefined sea salt
- 1 tsp lemon juice
- 1 tsp chipotle seasoning
- I highly recommend using an immersion blender for making mayonnaise. You can find one for about $30 and is worth every penny.
- In a high walled container or bowl combine all of the ingredients. Insert the immersion blender to the bottom and while blending, slowly raise it up without breaking the surface. Move the blender up and down a few times until the mayonnaise thickens. Remove blender, taste and adjust salt/seasoning to your liking and refrigerate before serving. This makes for a great dip for sweet potato fries and can be combined with ketchup or hot sauce for a dip for breaded cauliflower, chicken nuggets and more. Or use to make a classic hamburger pop and a sandwich memorable.
