Ingredients
  1. 1/2 cup Coconut (32g carbs, 20 g fiber)
  2. 1/2 tsp Baking Powder
  3. 1/4tsp Unrefined Sea Salt
  4. 1/4tsp Baking Soda
  5. 1/2 - 3/4 cup buttermilk (5.5-8g carbs)
  6. 1/4 cup Swerve or other natural sugar free sweetener or raw honey. Swerve is 1:1 ratio for sugar
  7. 2 tsp Vanilla
  8. 1-1 1/2 tsp peppermint
  9. 2 eggs
  10. 2 T sour cream (2grams)
  11. 1/2 c coconut
  12. 1/8 cup cocoa powder (4g carbs)
  13. 3T melted butter
Instructions
  1. Combine the dry, combine the wet, mix together and bake at 375 for ~15-20 minutes in mini muffin tins. Use liners with these or they will stick.
