Mexican Chorizo Seasoning Mix

Ingredients

  • Makes enough for ~1lb ground pork could be used for 2lbs if you don't like it as spicy/strong
  • I let the meat sit with the seasoning worked in overnight but can be used right away.
  • 1- 1 1/2 T Cumin
  • 1 tsp ground coriander
  • 2 tsp ground cloves
  • 1 bay leave ground
  • 1/4 tsp cinnamon
  • 1 tsp thyme
  • 1 T garlic powder
  • 2 tsp coarse sea salt
  • 1/2 tsp freshly ground pepper
  • 1 T smoked paprika
  • 1 T paprika
  • 1/2 tsp cayenne reduce to 1/4 if you don't like a lot of spice
  • 3 T apple cider vinegar

Instructions

  • Mix all of the spices together and then work into ground pork. Add vinegar and let sit over night or sauté right away until meat is cooked to temp.
