Easy Gingerbread Cookies

Ingredients
  1. 3 cups flour
  2. ½ tsp salt
  3. 1 T ground ginger
  4. 2 tsp ground cinnamon
  5. ¼ tsp ground cloves
  6. 6 T butter, soften
  7. ¾ cup brown sugar
  8. 1 egg
  9. ½ cup molasses or 1/4 c molasses and 1/4 c honey if you don't like the taste of molasses
  10. 1 1/2 tsp vanilla
  11. Optional: a few tsps of orange zest, lemon zest
Instructions
  1. Preheat oven to 375
  2. In a large bowl or stand mixer, cream together the sugar and butter. Beat in the egg. Mix in the molasses, vanilla and zest. Add in spices then finally the flour. Roll out the dough (if you want to chill dough first you can for a few hours or overnight) to about 1/4 in thickness. I recommend rolling out between parchment paper and then simply removing top layer and transferring to a baking sheet. Cut out shapes. Bake for 8-10 min. Let cool to harden.
