Gluten free, no sugar oatmeal raisin cookies

Ingredients

  • 1 cup walnuts
  • 1 1/2 cup gluten free oats
  • 2 1/2 tsp vanilla
  • 1 cup dates
  • 1/2 cup raisins
  • pinch of salt
  • 1/2 tsp BP
  • 1/2 tsp cinnamon

Instructions

  • Preheat oven to 375
  • In a food processor combine walnuts, dates and 1 cup of oats until a dough forms
  • add in vanilla, salt, and pulse until mixed
  • scoop into a bowl and mix in baking powder, cinnamon, 1/2 cup oats and raisins.
  • Shape cookies and bake for 10-15 minutes at 375 on parchment paper
