Mayonnaise can be very healthy and a great food for you – if done right. Sadly the mayonnaise that you buy in the store (this includes the expensive organic versions) contain refined vegetable oils.  The only way to get the best out of mayonnaise is to make it yourself, and luckily it is super easy to do that! Most recipes say that you need to slowly drizzle the oil.  You can do that if you want, or you can dump everything together, get out your immersion blender and go at it. I love creating new versions of mayonnaise each time to fit the dish I am making!

Homemade Mayonnaise

Ingredients

  • 1 large organic egg
  • 1 cup extra virgin olive oil
  • a dash of lemon juice or vinegar
  • salt to taste

Possible variations

  • Italian herbs
  • Smoked Paprika and chili
  • Curry
  • Siriracha

Instructions

  • Place a large egg, lemon juice and olive oil in a jar that will fit an immersion blender. Place blender at the bottom of the jar and start mixing. As the mayonnaise rises to the top, slowly pull the blender up. Add salt, mix to taste. This is when you can add herbs (fresh or dried), spices, siriracha, honey, etc. Store in fridge.
