Banana Chocolate Zucchini (or squash) Muffins

Ingredients

  • 1 1/2 c flour, you can use a gluten free mix or regular flour
  • 2 c shredded and drained zucchini or summer squash
  • 1 stick melted butter or 1/2c Harvest Butter Olive Oil
  • 2 bananas, mashed
  • 2 eggs
  • 2 tsp vanilla
  • 1/2 c honey
  • 1/2 c chocolate chips
  • 1/3 c cocoa powder
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1 tsp baking soda

Instructions

  • Preheat oven to 350
    Mix dry and wet ingredients separately, saving chocolate chips until the end. Mix wet and dry ingredients but DO NOT over mix or muffins will become very dense.  
    Pour into muffin tin and bake for 30-40 minutes until done.  These muffins are very very moist and a bit gooey but that is how my kids love them. 

Notes

Instead of bananas, you can add ~1/2 c apple sauce or roasted mashed beets.
