Cinnamon Eggnog Waffles
Ingredients
- 2 cups flour spelt, organic wheat, unbleached all purpose
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1 tsp unrefined sea salt
- 1 T cinnamon
- 1/2 tsp nutmeg
- 2 eggs- beaten
- 2 cups eggnog
- 1 tsp vanilla
- 5 T melted butter or coconut oil
- optional: 1/2 cup chopped pecans
Instructions
- In a large bowl combine all dry ingredients. Add in the wet ingredient and combine completely. Batter may seem thick. Mine turned out great as a thick batter as my waffle maker spreads it out evenly. You can add more milk if you need to thin it out. I also doubled the recipe and had plenty of waffles to freeze away for later- this is what I recommend doing anytime you make pancakes or waffles. Serve with cinnamon whipped cream/butter/plenty of real maple syrup!
