I needed an easy side dish to go with dinner last night -hand rolled herb linguini with a       sardine tomato sauce-P1030536

so I grabbed some cooked spaghetti squash from the fridge, heated it in the oven, added sun dried tomatoes, red pepper flakes and salt and just like that you have a delicious side dish that compliments just about anything!

Spaghetti Squash with sundried tomato

This quick meal not only looks good but tastes great too. Perfect for that "oh crap I forgot we have to bring a side dish" moment. I try to keep a few squash cooked up and in the fridge at all times which make dishes like this even more convenient.

Ingredients

  • spaghetti squash cooked
  • sun dried tomatoes in olive oil diced
  • extra virgin olive oil
  • red pepper flakes
  • unrefined sea salt
  • fresh herbs optional

Instructions

  • Combine squash and tomatoes including some of the olive oil and herbs the tomatoes were stored in. Season with red pepper flakes, salt and dress with additional olive oil. Serve warm.
