In a food processor blend peanuts and salt until well chopped. Add in prunes/dates and blend until a dough forms Pulse in chocolate chips. Form into a square of desired thickness in a parchment paper lined baking pan or balls and chill until firm. Cut bars and store in fridge.

There are endless variations to this type of bar: Add cocoa powder to make a double chocolate bar. Add 1/4 c shredded coconut Use any other type of nut instead of peanuts. Add flavors of choice. Use 1/2 amount of dates and sub in other dried fruits such as blueberries, cherries, mangos, pineapple, raisins, cranberries...Add instant coffee powder or coffee bean for a bar with a bit of a kick. Add powdered greens or protein powder for a meal substitute bar. ( you may need more fruit to help bind it) Add shredded carrot for carrot cake bar.
