Honey Ginger Lime Zucchini Pork Rolls

Ingredients

  • 1 lb ground pork
  • 1 small onion, finely diced
  • 4 cloves garlic minced
  • 1 tsp salt
  • 1 tsp red pepper flakes
  • 1 T Harvest Persian Lime Olive Oil
  • 2 T Harvest Honey Ginger Balsamic Vinegar
  • 2 T Coconut amino acids
  • 2 tsp lime juice
  • 2 zucchinis thinly sliced into long strips

Honey Ginger Lime Sauce- mix together in small bowl

  • 2 T Harvest Honey Ginger Balsamic Vinegar
  • 2 T Harvest Persian Lime Olive Oil
  • 1 T Honey
  • zest of one lime
  • 1 tsp red pepper flakes

Instructions

  • Preheat oven to 400
    Mix together pork and all ingredients except zucchini in a medium bowl.  Lay out slices of zucchini and place a small spoonful of pork filling on the strip and roll and place on a baking sheet with seam side down. Bake for 15-20 minutes until pork is cooked through.  serve with sauce.
