Simply Delicious Soft Bread/Rolls/Buns

It started out as a copycat recipe but has become instead a favorite go to recipe for soft rolls and sandwich bread.

Ingredients

  • 3 c all purpose flour- spoon and level or 375g
  • 3 c bread flour- if you don't have bread flour, just use all purpose.
  • 1/3 c melted OR soften butter- I did both and no one could taste the difference. Save the remainder of the stick of butter to brush on top before baking OR eat with the bread straight out of the oven.
  • 1 T salt
  • 2 packets instant yeast/fast acting. If you use active yeast, you need to then use warm water and proof the yeast first by sprinkling it into the warm water and let sit for 5 min. Otherwise, with fast acting yeast, you can directly add it to the flour.
  • 1 3/4-2 c water. You want to create a soft dough- so add water until you reach that consistency ( this video is available on my FB page if you need more help with determining what a soft dough is)
  • 1/4 c sugar
  • expand upon this recipe by adding herbs and spices... or swirl cinnamon or nutella in it before baking.

Instructions

  • In a stand mixer or large mixing bowl, combine all dry ingredients. Mix in butter and slowly add water until a soft dough forms. Knead in mixer with dough hook, or by hand until dough comes together into a ball around dough hook- about 5-7min or 7-10 min by hand.
    Set aside in a bowl, cover with plastic wrap or dish towel and let rise for an hour or so until it reaches around double the size.
    Remove the dough and lightly punch it down. Divide the dough into as many pieces as you like- all depending on the size of loaves or rolls you want to make.
    If you are making these into rolls/buns, take the piece of dough, place it on the counter and with your hand on top of it, circle your hand around, gently pressing down and then releasing the pressure. The dough should form into a perfect ball.
    If you wish to make sub sandwhich rolls, take your piece of dough and simply roll into a log.
    Place formed dough onto parchment paper lined cooking sheets and cover and let rise for 45min-1 hr.
    Preheat oven to 400 degrees.
    Using a sharp knife, create slits in the top of the dough (I make croses on the buns) and optional: brush with melted butter. Bake for 15-18minutes until golden brown.
    You can try to let it cool before eating...but let's not pretend that you won't be stealing a bite and enjoying it with some butter. That's what I do!
