Mix dry ingredients in a bowl. In a different bowl cream together the butter and sugar. Mix in the egg and honey and vanilla. Mix with dry ingredients and combine well. Form into a disk and cover with plastic wrap and refrigerate for 15 mint-overnight. Roll out dough and cut shapes. Bake at 375 for 10-15 minutes or until just golden brown. Thickness of cookies will impact baking time. Let cool. You can frost or add glaze if desired.
