Author Becky's Mindful Kitchen

Ingredients

  • 2 cups cooked, shredded or chopped chicken
  • 1 lb green beans
  • 2 green onions chopped
  • a few tablespoons of Harvest sesame oil
  • olive, avocado or peanut oil for cooking
  • a few tablespoons of Harvest garlic olive oil

Sauce (I doubled this recipe, adjust sriracha based on how spicy you like your food)

  • 2 T sriracha
  • 2 T honey
  • 2 T Harvest garlic olive oil
  • 4 T Harvest honey ginger vinegar
  • 1 tsp fresh ginger or from a jar
  • Salt to taste

Garnish

  • cilantro
  • fried rice noodles
  • Serve with rice noodles or alone

Instructions

  • Heat sauce in small saucepan until just simmering and remove from heat.
In a wok or large pan, sauté green beans in peanut oil and garlic oil until tender, add in chicken and green onions and cook until heated through, add a dash of sesame oil at the end.  Add sauce ( I doubled the recipe, it's up to you if you want the extra sauce).  Stir until everything is completely coated.  Add in cooked rice noodles and mix well.  Adjust salt to your preference.  Serve with cilantro and fried rice noodles.
