Mix together flour and salt in a medium bowl. Work in butter and water. Roll out dough. Lay into a 8.5 in or 9 in circular pan. Prick bottom of the dough with a fork.
Custard
Mix together all ingredients in a medium bowl and add in herbs of choice.
Pour custard into the crust and top with cheese. Bake for about 30 minutes until firm to the touch.
