1 1/2cflour, you can use a gluten free mix or regular flour
2cshredded and drained zucchini or summer squash
1stickmelted butter or 1/2c Harvest Butter Olive Oil
2bananas, mashed
2eggs
2tspvanilla
1/2choney
1/2cchocolate chips
1/3ccocoa powder
1/2tspsalt
1/4tspbaking powder
1 tspbaking soda
Instructions
Preheat oven to 350Mix dry and wet ingredients separately, saving chocolate chips until the end. Mix wet and dry ingredients but DO NOT over mix or muffins will become very dense. Pour into muffin tin and bake for 30-40 minutes until done. These muffins are very very moist and a bit gooey but that is how my kids love them.
Notes
Instead of bananas, you can add ~1/2 c apple sauce or roasted mashed beets.
