Sweet Red Onion and Brie Bread

Ingredients

  • 450 g bread flour
  • 50 g rye flour
  • 10 g salt
  • 1 packet yeast
  • ~350 ml warm water
  • a few T red onion jelly or 1/2 red onion sliced and carmalized with 1 T sugar and butter
  • ~1/2c brie cheese
  • 1/2-3/4c chopped walnuts

Instructions

  • In the morning create the dough with flour, salt, yeast and water and knead for ~15 minutes in stand mixer or by hand. Dough should be very soft and elastic.  Let rise for as long as possible, ideally 5-6 hours.  
    Punch down dough and roll out into a rectangle. Spread filling of jelly, cheese and walnuts and roll up the dough forming a log.  Create a spiral with the rolled dough and place in round pan that is well buttered or lined with parchment.  Cover and let rise for another hour.  Preheat oven to 375.  Brush with an egg wash and bake for 35-45minutes or until it is nicely browned on top and firm on the bottom. The bake time depends on the size of your loaf.
