Pumpkin Bars

Ingredients

Crust

  • 2 1/2 c flour
  • 1/2 tsp salt
  • 1/2 c powdered sugar
  • 1 c brown sugar
  • 2 sticks butter, soften , or 1 c Harvest butter olive oil
  • optional: extract of choice- 1tsp

Filling

  • 2 eggs
  • 1 can pumpkin or sub in 2 cups cooked butternut squash or roasted pumpkin
  • 1/4 c honey or maple syrup
  • 1/2 c brown sugar
  • 1 tsp vanilla
  • 1 tsp ginger
  • 1/4 tsp allspice
  • 1/4 tsp cloves
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/4 c heavy cream

Instructions

  • preheat oven to 350
    Crust: Cream together butter and sugars and add remaining ingredients.  Press into a baking pan, 9 x13 works well and bake for about 15 minutes until just turning golden brown. 
    Filling: combine all ingredients in a bowl and mix until well combined.  Add to pre baked crust and bake for 30-40 minutes or until the filling barely jiggles when you move the pan. 
    Serve with whipped cream, warm or cool.  Store in fridge.
