6largepotatoes- optional add or substitute 1/3 amount with turnips
3largegarlic scapes including bulb head with seeds
1bunch swiss chard
salt and pepper to taste
1/3cHarvest Wild Dill Olive Oil or Garlic Olive Oil
Instructions
Boil potatoes and/or turnips until you can easily slide a fork into them. Drain water and return potatoes to the same pot. Finely chop up garlic scapes, swiss chard (including most of the stalk). Blend potatoes with an immersion blender adding the olive oil as you blend. Stir in chard and garlic scapes and season with salt and pepper to taste. You can also add in fresh dill for more flavor. Serve hot.
