Optional: top with nutsadd in chocolate chips instead of raisins, substitute other fruit for raisins, substitute zucchini for carrots and add in some cocoa powder as well. Substitute nondairy milk and melted coconut oil for butter.

Preheat oven to 375
Mix together all wet ingredients in one bowl. Dry ingredients in the other and happily combine. Bake for 30-35 minutes. Once cooled muffins will pull away from wrapper but when warm will stick to it.
