Easy microwave lemon curd


  • 1 c white sugar
  • 3 eggs beaten
  • 1 c lemon juice
  • 3 lemons zested
  • 1 stick butter


  1. In a microwave-safe bowl,mix the eggs and sugar together. Add in remaining ingredients. Heat in microwave for 1 minute intervals, stirring after each minute until mixture is thick enough to coat the back of a spoon. Store up to 3 weeks in fridge.
