Easy Coconut Macaroons


  • 1 14oz bag sweetened coconut
  • 3/4 c plus 2T sweetened condensed milk
  • 1 tsp vanilla extract
  • 2 egg whites, beaten into stiff peaks
  • 1/4 tsp salt


  • Preheat oven to 325
    In one bowl mix together all ingredients except egg whites and salt.  
    In a separate bowl beat egg whites and salt until they form stiff peaks. Fold into coconut mixture. 
    Form macaroons into an oversized 1 tablespoon mound on parchment paper and bake for 23-25 minutes. 
    Optional: melt chocolate and dip cooled macaroons into melted chocolate and let cool.
