Easy microwave lemon curd


  • 1 c white sugar
  • 3 eggs beaten
  • 1/2 c lemon juice
  • 3 lemons zested
  • 1/2 stick butter


  • In a microwave-safe bowl,mix the eggs and sugar together. Add in remaining ingredients. Heat in microwave for 1 minute intervals, stirring after each minute until mixture is thick enough to coat the back of a spoon. It takes around 5-7 min. You can also cook this on the stove in a sause pan until just before a simmer around 170 degrees when it thickens up. Store up to 3 weeks in fridge.
