Ginger Lime Fish Soup
Ingredients
- 3 tilapia fillets, cut into chunks
- 4 tsp fresh ginger/ginger from a jar
- 1 c diced mushrooms
- 3 green onions chopped
- 2-3 cups fish stock
- 1 ribbon udon noodles or rice noodles
- splash of fish sauce
- 1/2 lime lime juice and zest of lime
- a few tablespoons of Harvest Persian Lime Olive Oil
- a few tablespoons of Harvest Sesame Oil
- sea salt to taste
- cilantro to garnish
- fried rice noodles for garnish
Instructions
- In a wok or pot, heat oils and sauté fish. Add ginger, mushrooms, green onions and lime juice and zest. Cook for a few more minutes, feel free to add a dash of both oils. Add in a splash of fish sauce and stock. Cook uncovered for about 10 minutes, salt to taste. Add cooked udon or rice noodles and serve with fresh cilantro and fried rice noodles.
