Ginger Lime Fish Soup

Ingredients

  • 3 tilapia fillets, cut into chunks
  • 4 tsp fresh ginger/ginger from a jar
  • 1 c diced mushrooms
  • 3 green onions chopped
  • 2-3 cups fish stock
  • 1 ribbon udon noodles or rice noodles
  • splash of fish sauce
  • 1/2 lime lime juice and zest of lime
  • a few tablespoons of Harvest Persian Lime Olive Oil
  • a few tablespoons of Harvest Sesame Oil
  • sea salt to taste
  • cilantro to garnish
  • fried rice noodles for garnish

Instructions

  • In a wok or pot, heat oils and sauté fish. Add ginger, mushrooms, green onions and lime juice and zest. Cook for a few more minutes, feel free to add a dash of both oils.  Add in a splash of fish sauce and stock.  Cook uncovered for about 10 minutes, salt to taste.  Add cooked udon or rice noodles and serve with fresh cilantro and fried rice noodles.
