Pumpkin Bars
Ingredients
Crust
- 2 1/2 c flour
- 1/2 tsp salt
- 1/2 c powdered sugar
- 1 c brown sugar
- 2 sticks butter, soften , or 1 c Harvest butter olive oil
- optional: extract of choice- 1tsp
Filling
- 2 eggs
- 1 can pumpkin or sub in 2 cups cooked butternut squash or roasted pumpkin
- 1/4 c honey or maple syrup
- 1/2 c brown sugar
- 1 tsp vanilla
- 1 tsp ginger
- 1/4 tsp allspice
- 1/4 tsp cloves
- 2 tsp cinnamon
- 1/4 tsp salt
- 1 1/4 c heavy cream
Instructions
- preheat oven to 350Crust: Cream together butter and sugars and add remaining ingredients. Press into a baking pan, 9 x13 works well and bake for about 15 minutes until just turning golden brown. Filling: combine all ingredients in a bowl and mix until well combined. Add to pre baked crust and bake for 30-40 minutes or until the filling barely jiggles when you move the pan. Serve with whipped cream, warm or cool. Store in fridge.
