about 3 cups chocolate chips (dark, semi sweet, milk, white- you are in control) and 1 T butter/oil/coconut oil
Instructions
In a bowl (stand mixer or hand held mixer will make your life easier but you can do it by hand too)- blend together all ingredient except chocolate chips. Start with 1.5 tsp peppermint and increase if you want. Spread the blended deliciousness onto a piece of parchment OR wax paper or silicone baking mat. You want to spread it to the thickness that you want your filling to be. This step is only for those with a circular cooking cutter or item that can cut out circles the size of the candies you want to make. Otherwise- place balls of the mixture onto the parchment/wax paper. You will flatten the balls out after they have chilled. Place sheet in fridge for an hour or so OR in freezer for like 20 min. You want it to be hard as we are dipping them into melted chocolate next. Cut out circles or flatten the balls into discs using the bottom of a glass or measure cup. Melt chocolate chips with the 1 T of butter or oil in microwave. You want to start with 1 min. Stir. then 30 sec. Stir. 15 sec..etc until melted. Place discs of the filling on a fork and dip into the melted chocolate. Let harden on parchment paper. Store in fridge or freezer and enjoy! Blend these into the ice cream custard for amazing mint chocolate ice cream!
