Texas Caviar
Ingredients
- 2 cans black-eyed peas- rinse and drained or sub in other canned beans
- 1 can diced tomatoes with green chilies-rinsed and drained
- 1 green pepper- finely diced
- 1 red onion-finely chopped
- 2 stalks celery- chopped
- 1/2 c Italian Dressing (I'll have a post with the recipe soon or use store bought)
- 2 T lime juice
- salt to taste
- get creative- use other peppers, and produce
- 1 avocado- optional
- 1 can sweet corn or off the cob
Instructions
- combine ingredients, salt and pepper to taste. Serve as a dip or on top of greens.
