I have been talking about making my own almond butter for goodness knows how long. I told countless people about how easy it supposedly was and that I planned on doing it that week…well that week turned into the next and co op’s grinder is so convenient…I finally sat down to do it today. And it really is easy, it took way longer than I expected, about 20 minutes or longer. You do not want to over dry or roast your almonds as the oil content allows for a creamier butter. About halfway through I looked over at the jar of pecans I had been snacking on all morning and decided to add pecans. Why? Because I love them. And that is good enough for me!
Almond Pecan Butter
This isn't hard, just take some time. Your food processor will get warm so don't worry when that happens. Keep a close eye and be ready to scrap the butter off the sides and from under the blades. I made 3 batches, added salt to 2, and coconut oil to 1 just to see if I could taste it. I like all 3 equally well and I look forward to making specialty butters for a fraction of the price you can buy them for. I used the almonds I had soaked and dehydrated, doing that step is totally up to you!

- I just did a few cups at a time. Put nuts in processor and blend!
