I wanted to experiment with a healthy tater tot recipe. This isn’t my personal favorite but I also am not a huge tater tot fan. What I am excited to do is add to this basic recipe and make pizza flavored ones, cheese (or nutritional yeast) and bacon, and a spicy version.
Basic Gluten Free Sweet Potato Tater Tots
This recipe can be easily adjusted depending on how many potatoes you have, if you wanted to add bacon to the mix, different seasonings etc. I wanted to post a basic recipe for those with picky eaters at home! I meant to try adding nutritional yeast for a cheesy flavor but forgot. So that will be happening next time!
Ingredients
- 3 sweet potatoes peeled and grated
- 2 eggs beaten
- 2 tsp unrefined sea salt
- 1 cup or more corn meal for polenta
- 1/2-1 cup brown rice flour
Instructions
- Preheat oven to 375. Peel and grate sweet potatoes, wrap in a cheese cloth or towel and wring out extra potato juice and put into a large bowl. Add eggs and brown rice flour and salt. Combine and form into your desired shape. In a separate bowl combine polenta with about a tsp or so more salt and roll the tots in the polenta and place on a parchment paper covered baking sheet. Bake for 25-30 minutes. These will be very neutral in flavor. My 3 year old loved them, but I will be adding different herbs and spices to future recipes and will post those changes as they happen. I do think adding uncured bacon would be delicious.
