Basic Muffin Recipe

Author Becky's Mindful Kitchen

Ingredients

  • 2 cups flour
  • 1 T baking powder
  • 1/2 tsp salt
  • 3 T honey or sugar (white or brown) increase to 1/2c or more for sweet muffins
  • 1 egg beaten
  • 1 cup milk or buttermilk
  • 1/4 cup melted butter or coconut oil- because of the low fat content muffins may stick to liners so spray them or brush with butter or increase butter to 1/3-1/2 c to play around with flavors. I normally use about 1/3c if I am not adding another source of fat to create a richer flavor.
  • 1 tsp vanilla

Instructions

  • Note: this basic muffin recipe is incredibly plain if baked as is, the purpose is that it gives you a neutrual base to build off of and be creative with flavors.
Mix wet and dry ingredients separately and then combine but do not over mix.  Bake for 20-25 minutes at 375.  Check with toothpick to see if done.
