While staring at the 1/2 full dish of brown sugar buttered pecan sweet potatoes yesterday all I could think was “pancakes”. It was that or a sad slow death in the fridge as my family’s desire to eat leftovers was quickly dwindling. I cooked for 15 people, we had a fraction of that actually at our little Thanksgiving this year so leftovers were literally spilling out of the fridge and I had to make our deck into a walk in cooler. So by just adding some flour, oats, milk and some eggs I turned leftover sweet potatoes into delicious pancakes with crunchy pecans inside!
Sweet Potato brown sugar pecan pancakes (Thanksgiving leftover dish)
Ingredients
- 1 1/2 cup sweet potato dish
- 1 1/4 cup wheat flour or flour of choice
- 1/2 cup oats
- 1 tsp Baking soda
- 2 eggs
- 1-2 cups milk
- pinch of salt
- 1 1/4 tsp vanilla
- 2 T melted butter
Instructions
- Combine the ingredients and add milk until your batter is the right consistency for pancakes.
- Cook and enjoy!
