Chocolate Chip Banana Bread

  • 7 bananas
  • 1 cup apple sauce
  • 1 stick melted butter
  • 2 eggs beaten
  • 2 tsp vanilla
  • 2 tsp almond extract
  • 2 tsp baking soda
  • 1 tsp salt
  • 3 cups flour I use spelt flour, but you can use any organic all purpose flour or unbleached flour
  • 1 cup oats
  • 1 cup dark chocolate chips
  • 1/4 cup honey
  • walnuts optional


  • preheat oven to 375.
  • In a large bowl mash bananas and add in all liquid ingredients. Add in flour, oats, baking soda and chocolate chips and mix well. Pour into buttered loaf pans. Add walnuts on top if you wish. Bake for 40-45 minutes or until you can stick a tooth pick in and it comes out clean. I recommend removing a bit early and letting sit in loaf pan outside of oven to finish cooking.

To make into muffins

  • Pour batter into buttered or paper lined muffin tin and bake for ~25 minutes.
