Chocolate Peppermint Coconut Bites, Sugar Free, Grain Free

Ingredients

  • 1/2 cup Coconut 32g carbs, 20 g fiber
  • 1/2 tsp Baking Powder
  • 1/4 tsp Unrefined Sea Salt
  • 1/4 tsp Baking Soda
  • 1/2 - 3/4 cup buttermilk 5.5-8g carbs
  • 1/4 cup Swerve or other natural sugar free sweetener or raw honey. Swerve is 1:1 ratio for sugar
  • 2 tsp Vanilla
  • 1-1 1/2 tsp peppermint
  • 2 eggs
  • 2 T sour cream 2grams
  • 1/2 c coconut
  • 1/8 cup cocoa powder 4g carbs
  • 3 T melted butter

Instructions

  • Combine the dry, combine the wet, mix together and bake at 375 for ~15-20 minutes in mini muffin tins. Use liners with these or they will stick.
