Chocolate Peppermint Coconut Bites, Sugar Free, Grain Free
Ingredients
- 1/2 cup Coconut 32g carbs, 20 g fiber
- 1/2 tsp Baking Powder
- 1/4 tsp Unrefined Sea Salt
- 1/4 tsp Baking Soda
- 1/2 - 3/4 cup buttermilk 5.5-8g carbs
- 1/4 cup Swerve or other natural sugar free sweetener or raw honey. Swerve is 1:1 ratio for sugar
- 2 tsp Vanilla
- 1-1 1/2 tsp peppermint
- 2 eggs
- 2 T sour cream 2grams
- 1/2 c coconut
- 1/8 cup cocoa powder 4g carbs
- 3 T melted butter
Instructions
- Combine the dry, combine the wet, mix together and bake at 375 for ~15-20 minutes in mini muffin tins. Use liners with these or they will stick.
