Mexican Chorizo Seasoning Mix

Ingredients

  • Makes enough for ~1lb ground pork could be used for 2lbs if you don't like it as spicy/strong
  • I let the meat sit with the seasoning worked in overnight but can be used right away.
  • 1- 1 1/2 T Cumin
  • 1 tsp ground coriander
  • 2 tsp ground cloves
  • 1 bay leave ground
  • 1/4 tsp cinnamon
  • 1 tsp thyme
  • 1 T garlic powder
  • 2 tsp coarse sea salt
  • 1/2 tsp freshly ground pepper
  • 1 T smoked paprika
  • 1 T paprika
  • 1/2 tsp cayenne reduce to 1/4 if you don't like a lot of spice
  • 3 T apple cider vinegar

Instructions

  1. Mix all of the spices together and then work into ground pork. Add vinegar and let sit over night or sauté right away until meat is cooked to temp.
