Genoise Sponge Cake

  • 6 ` eggs- room temperature
  • 235 g sugar
  • 1/2 tsp salt
  • 235 g flour


  • Preheat oven to 350
    In a stand mixer or with hand mixer, beat eggs and slowly add sugar and salt.  Continue mixing on med/med high until mixture at least doubles in size- about 10 minutes.  To check to see if mixture is done, lift the whisk attachment and draw the first letter of your name in the mixture and count to ten.  If you can still see your letter then it is good to go. If not, continue to mix.  Fold in the flour making sure to fully incorporate it without losing too much volume- do not over mix. Pour into prepared cake pans that are lined with parchment.  I normally use 2x9in springform pans.  Bake for 20-30 minutes until golden brown- time depends on size of pan that you use.  Cool for a few minutes before transferring to a cooling rack.  Use a knife to slice the cakes through the middle to create multiple layers.
