One of the best ways to experiment with Harvest’s olive oils is by making crackers. You can turn a simple snack into a gourmet experience simply by swapping out a commercial olive oil with a specialty oil from Harvest. Here are a few of my favorite oils to use and suggested herb pairings. I recommend adding in about a teaspoon or two of the herbs and while it isn’t delicious as a dough, tasting the cracker dough will allow you to adjust the flavor to your liking. If you don’t like a lot of rosemary, don’t use much or any at all. Take control of your recipe and make it your own!
Here is the basic cracker recipe:
- 2 cups flour
- 1 tsp baking powder
- 1 1/2 tsp coarse sea salt
- 1/4cup olive oil
- 3/4-1 cup water
- herbs and spices
- preheat oven to 375
- Mix dry ingredients and then add in olive oil then water. Tip- if you can’t smell the herbs/spices you won’t be able to taste them. The dough should not be so wet that you can’t roll it out. It should be able to be formed into a ball. Add more flour if it is too wet.
- Roll out dough between parchment paper to desired thinnest and then cut into shapes using a pizza cutter. The thickness of the cracker is up to you, you can make these into flat bread style crackers as well simply by not rolling them out very thin.
- Bake for 20-25 minutes until just turning golden brown. They will crisp up as they cool.

Tuscan Herb Olive Oil with basil, rosemary, oregano and thyme.
Cilantro and Roasted Onion Olive Oil with fresh or dried cilantro, onion powder, parsley and black pepper
Rosemary Olive Oil and garlic olive oil (use half and half), fresh or dried rosemary, garlic powder, thyme.
Butter Olive Oil, garlic powder
Basil and garlic oil (use half and half) and a dash or two of walnut oil, fresh basil, garlic powder
