Keto Muffins

  • 1 c almond flour
  • 1/3 c coconut flour
  • 1 tsp baking powder
  • 1/2 c melted butter or flavored Harvest olive oil (lemon, blood orange, persian lime and butter all work great) or coconut oil
  • 1/2 c sweetener of choice (adjust to your preference)
  • 1 c almond or coconut milk
  • 1/2 tsp salt
  • 2 tsp vanilla
  • 2 tsp flavor of choice (optional)
  • 2 eggs
  • optional: wild blueberries for blueberry muffins, lemon & poppy seed, chocolate chips, coconut, etc


  • Preheat oven to 375
    In a stand mixer or in a medium bowl combine the wet ingredients and then add in dry ingredients.  Bake as mini or regular sized muffins until tooth pick comes out clean.  About 20-25 minutes.
