Mexican Wedding Cookies
- 2 sticks butter
- 3/4 c powdered sugar
- 2 tsp vanilla or extract of choice
- 1 c chopped nuts- pecans, almonds, walnuts..
- 1/4 tsp salt
- 2 c flour (GF optional)- if dough is too sticky- add 1/4c more
- powdered sugar for rolling cookies
Preheat oven to 400
Cream butter and sugar until light and fluffy. Add in vanilla, salt and flour. Mix together. Add in nuts and additional 1/4c flour if needed. You may chill dough as well to make it easier to work with. Roll dough into 1in balls and place on lined baking sheet and bake for about 7-10 min, cookies will just start to brown. Remove and let cool briefly then roll in powdered sugar while still warm. You will get about 50 cookies total.
