Texas Caviar


  • 2 cans black-eyed peas- rinse and drained or sub in other canned beans
  • 1 can diced tomatoes with green chilies-rinsed and drained
  • 1 green pepper- finely diced
  • 1 red onion-finely chopped
  • 2 stalks celery- chopped
  • 1/2 c Italian Dressing (I'll have a post with the recipe soon or use store bought)
  • 2 T lime juice
  • salt to taste
  • get creative- use other peppers, and produce
  • 1 avocado- optional
  • 1 can sweet corn or off the cob


  • combine ingredients, salt and pepper to taste. Serve as a dip or on top of greens.
