Traditional Irish Soda Bread
I learned this recipe while baking for a restaurant in West Cork Ireland. The baker used coffee mugs for measurements, so I continue her tradition. Use a standard mug- not an oversized one.
Ingredients
- 5 mugs coarse wheat flour
- 2 mugs quick oats (or place old fashion oats in a food processor and pulse a few times)
- large pinch sea salt
- 2 tsp baking soda
- 2 lumps butter
- 2 pints buttermilk
Instructions
- Preheat to 375 and grease 2 loaf tins
- Mix together all ingredients, stirring in buttermilk last. Bake for about 1 hour and then turn upside down in tin to cool for 15 minutes.
