Guinness Brownies with Bailey's Buttercream Frosting

  • 2 c sugar
  • 1/2 c melted butter or Harvest Butter Olive Oil
  • 2 tsp coffee extract
  • 1 tsp vanilla extract
  • 2 eggs
  • 1 c Guinness
  • pinch of salt
  • 1/2 c chocolate chips
  • 2/3 c cocoa powder
  • 1 c flour


  • 1 stick butter
  • 4 T Bailey's
  • 2 tsp coffee extract
  • ~3-4 c powdered sugar


  • Preheat oven to 350
    In a stand mixer or large bowl, mix together all ingredients except the flour.  Stir in flour until combined and pour into a foil lined baking dish.  Bake for ~40 minutes or until a tooth pick inserted comes out clean. 


  • In a stand mixer, blend all ingredients except for sugar.  Slowly add sugar until it gets to your desired consistency.  Spread on cooled brownies. If frosting is too dry, add more Bailey's or cream.
