Serrano Honey Steak and Summer Squash

Ingredients

  • 1.5 lb steak, any cut works but will need to be thinly sliced
  • 3 T Harvest Serrano Honey Balsamic Vinegar
  • 2 T Harvest Smoked Chibani Olive Oil
  • 1 T Harvest Blood Orange Olive Oil
  • 1.5 tsp chili powder
  • 1t tsp cumin
  • 1 tsp salt
  • 1 lime, juiced
  • 2 medium zucchini, thinly sliced
  • 1 medium yellow summer squash, finely diced
  • optional: serve over rice or pasta or in a warmed tortilla

Instructions

  1. In a large pan heat olive oil.  Add chili powder and cumin and salt and thinly sliced steak and cook for just a few minutes until meat is browned.  Add in zucchini and squash, lime and balsamic and cook for just a minute or two longer.  Adjust salt to taste.
