While staring at the 1/2 full dish of brown sugar buttered pecan sweet potatoes yesterday all I could think was “pancakes”.  It was that or a sad slow death in the fridge as my family’s desire to eat leftovers was quickly dwindling.  I cooked for 15 people, we had a fraction of that actually at our little Thanksgiving this year so leftovers were literally spilling out of the fridge and I had to make our deck into a walk in cooler.  So by just adding some flour, oats, milk and some eggs I turned leftover sweet potatoes into delicious pancakes with crunchy pecans inside!

Sweet Potato brown sugar pecan pancakes (Thanksgiving leftover dish)

Ingredients

  • 1 1/2 cup sweet potato dish
  • 1 1/4 cup wheat flour or flour of choice
  • 1/2 cup oats
  • 1 tsp Baking soda
  • 2 eggs
  • 1-2 cups milk
  • pinch of salt
  • 1 1/4 tsp vanilla
  • 2 T melted butter

Instructions

  • Combine the ingredients and add milk until your batter is the right consistency for pancakes.
  • Cook and enjoy!
