Coconut Macaroons


  • 2 1/2 c sweetened shredded coconut
  • 3 egg whites
  • 1/2 c sugar
  • 2 tsp flavor of choice
  • 1 large pinch salt
  • 1 1/2 c melted chocolate chips to drizzle or dip baked cookies in


  • Preheat oven to 350 
    Beat egg whites in a bowl with a whisk or hand held mixer or in a stand mixer until frothy.  
    Add in sugar and salt while whisking/beating eggs until mixture becomes slightly stiffer than soft peaks.
     Fold in shredded coconut (add extra coconut if needed). 
     With wet hands, form balls and place on parchment paper.  Bake for 15-20 minutes. Let cool and then either drizzle with chocolate or dip the bottom of each cookie in the chocolate.
