KICK CAMP Recipes 7/21-7/25 Discover Italy

The following recipes were developed by the participants in the camp, ages 9-15. 

Group: Italian Cuisine 

Spaghetti Sauce

Author Italian Cuisine (Matt, Quinn, Wes, Paige)

Ingredients

  • 6 lb 10oz can of whole tomatoes
  • 1 lb ground beef
  • 1 onion
  • olive oil
  • 2 tsp oregano
  • 1 tsp rosemary
  • 1 tsp thyme
  • 4 cloves garlic
  • 2 bay leaves 2 Tbls garlic powder
  • 1 T honey
  • Salt
  • 1 tsp chives

Instructions

  • Brown the ground beef in a pan and set aside
  • Sautee onions in a large pot with a few tablespoons olive oil
  • Add in tomatoes, squishing them by hand
  • Add in seasonings and cook for about 15 minutes, remove bay leaves.
  • Season to taste

Chocolate and Strawberry Surprise Pie

Ingredients

  • Pie Crust recipe on Becky's Mindful Kitchen index
  • Whipped cream with sugar and vanilla
  • Mascarpone with sugar cocoa powder
  • Strawberries sliced
  • Shaved Chocolate

Instructions

  • Bake pie crust and let cool
  • layer chocolate mascarpone, whipped cream and strawberries, top with shaved chocolate

Group: Flying Hippos

Pizza Sauce

Author Flying Hippos ( Savannah, Tia, Alice, Emma)

Ingredients

  • 1 crushed clove of garlic
  • 1 teaspoon honey
  • 1 1/2 cups tomato paste
  • 10 leaves basil ripped
  • 1 T garlic powder
  • 1 T thyme
  • 1/2 tsp pepper
  • salt to taste

Instructions

  • In a small pan, simmer ingredients and season to taste.

Minty Chocolate Chunk Pie

Ingredients

  • Square Pie Crust
  • Chocolate Mint Whipped Cream ( whipped cream with sugar cocoa powder, 1 tsp peppermint,
  • Mascarpone Cheese
  • Chocolate Chips
  • White Chocolate Drizzle

Instructions

  • Bake the crust and let cool
  • Filling: make whipped cream and mix together with mascarpone, chocolate chips. Fill the crust and top with melted white chocolate, mint leaf and raspberry.

Paige’s Kitchen

Alfredo Sauce

Author Paige's Kitchen ( Paige, Paige, Caroline, Lilly)

Ingredients

  • 2 sticks butter
  • 1/8 cup flour
  • nutmeg
  • white pepper
  • salt
  • 1 cup milk or cream
  • 1 cup parmesan cheese grated
  • fresh parsley chopped

Instructions

  • Melt the butter in a pan, add cream and a pinch of nutmeg, and white pepper, salt to taste. Add in cheese and flour if needed to thicken. Garnish with fresh parsley.
