I advocate seasonal eating and I take complete ownership that this salad is not seasonal and mangos are anything but local. That being said, this salad is delicious, looks beautiful and is sure to impress any dinner guests with the pairing of brie and mango. There are no rules for this salad, so if you are missing an ingredient don’t fret- just have fun playing around with the flavors and make it taste good to you! I tell all of my culinary students and private clients the same phrase- Own Your Palate. You are in charge!
Mango Brie Salad with Ginger Lime Dressing
Ingredients
- Bell or Sweet Peppers Sliced
- Red Onion finely minced
- Cilantro chopped reserve some for the dressing
- Avocado cubed - optional
- raw honey
- unrefined sea salt
- Mango- cubed or sliced
- Brie cheese- cubed
Dressing
- fresh ginger
- cilantro
- lime
- salt
Instructions
- Mix and taste the dressing in a mini food processor or anything that will finely chop the ginger and cilantro and allow the flavors to completely combine.
- Mix your salad ingredients together and drizzle the dressing over it. Drizzle raw honey over the salad ( this sweetness is important) and serve and most importantly, ENJOY!
