Lavender Radish and Beet Salad

  • radishes, thinly sliced
  • fresh beets, thinly sliced
  • spring onion, thinly sliced (include the greens)
  • carrots, thinly sliced
  • Harvest Wild Raspberry Vinegar
  • Harvest Lavender Balsamic (feel free to add chopped fresh lavender as well)
  • Harvest Persian Lime Olive Oil
  • Sea Salt to taste


  • This is a great salad that you can add to and omit from, it is best made ahead of time to allow the flavors of the dressing to soak in and tenderize the vegetables.  I use my mandoline slicer to insure extra thin slices of the radishes, onions and beets.  Mix all veggies in a bowl and add equal parts of the two vinegars and then olive oil.  ( ex: 2T wild raspberry, 2T lavender, 4T olive oil). Adjust salt to your taste.
